Welcome back for another week of my paleo plate! (If you missed last week’s explanation post – you can find it here!)
This week was absolutely CHAOTIC! I pretty much FAILED at taking pictures, and truthfully I didn’t have the best eating week too. Firstly because I spent Sun-Tues sick with a fever and no appetite. I think I pretty much lived on bubble water and crackers… (Totally not Paleo!!) Then I spent the rest of my week playing catch up. I have the hardest time staying Paleo when my week is insane. It seems like no matter how much planning I put in, the temptation of doing what is easiest wins…
I bought a book this week to help me fight the “just do what is easiest” voice in my head!
Paleo Power Lunch: Easy, Filling, & Delicious Workday Meal Strategies is $14.48 on Amazon. So far I really like it!
So what did I eat this week:
Wednesday:
*My first day back to real food.
Breakfast: Cashews and a banana.
Lunch: Nitrate free deli turkey and ham, guacamole, strawberries, peppers, plantain chips.
Dinner: Garlic roasted sweet potatoes and green beans (the regular potatoes were for my husband) with lemon chicken (was so hungry I ate my plate before taking a picture!!)
Thursday:
Breakfast: (not shown) coconut milk smoothie.
Lunch: Random and light… Guacamole with salsa, strawberries, snap peas, black olives.
Dinner: Cabbage with carnitas, olives, red peppers, salsa.
Dessert: Liz lovely cookie!
Friday:
Breakfast: (Not shown) Smoothie made with coconut milk, blackberries, raspberries, strawberries, blueberries, and banana.
Lunch: Guacamole and plantain chips, apple slices, and a Tuna/Sweet potato bowl with cherry tomatoes, olives, and olive oil.
Dinner: (Also not shown – told you I stunk at pictures this week!) BLT Salad with sunflower seed and sun dried tomato dressing. (Recipe coming soon!)

Seeing what you have eaten during the week makes it so clear why the diet is so successful. It’s fascinating.
