From the minute my family and I saw the trailer to Disney’s Moana I knew it was going to be an opening weekend family date! When it came to deciding where to watch this movie and its brilliant animation I knew the answer was in Dolby Cinema the AMC Prime here in Las Vegas. How could it not be after our amazing viewing experiences watching The Jungle Book, Finding Dory, and Dr. Strange!

I have now watched several movies in Dolby Cinema at our local AMC Prime movie theater I knew there was no better way to  experience the colors, music, and story of Disney’s Moana! This theater was designed to give movie-goers the best viewing experience possible. The plush recliner seating, amazing visual Dolby technology, and enhanced sound makes it our favorite way to catch a movie we have all been waiting to see. True with Disney movies we are pretty much guaranteed to love the movie, but Dolby Cinema makes the best movies even better.

Moana will be playing in Dolby Cinema nationwide starting November 23rd! Check out this full list to see if there is a showing near you! My boys and I are super excited to see it in Las Vegas at the AMC TownSquare 18 this weekend.

Paper Trax are a paper based race track which attach to your walls for hours of fun! The Paper Trax are completely recyclable and attach harmlessly to your walls using 3M Command Strips. The Trax come in a box of 10 track sections PLUS the box they come in can be made into an extra track! The tracks were very easy to put together. There are instructions printed on EACH piece of track! A couple simple folds, insert tabs into slots,  and push the tabs in. Hannah (3 years old) was able to help me even!

Additionally, these are not just boring printed paper. The Speedway Super Track is shown and it has words printed on the wall, race cars printed on the side, and best of all tire tracks on the road surface! The tracks have a lip so the cars will stay on the tracks on the walls. They all have tapered ends on the track to overlap nicely with the next piece, while not slowing down the cars.  The box also includes all of the 3M Command Strips necessary to attach the tracks to the walls. (Note: please test so you don’t remove paint etc!) I was able to easily attach and even move a couple of the tracks. You can’t see the 3M Command Strips! There is a lip on the track which goes against the wall – so that all those colored matchbox cars don’t scratch up the wall!

The Paper Trax can be configured in many different ways to incorporate jumps or crashes! My kids are a little on the shorter side so we didn’t go too crazy with our track design, however I am planning on buying some new 3M Command Strips in a couple months and updating the configuration! The kids loved racing their cars from both ends and seeing if they could crash! The loved having ‘jumps’ in the track and cracked up if a car didn’t make the jump! This is definitely and activity that they will play for longer than 5 minutes. I seriously appreciate that!

Paper Trax also have a Dino edition & a Corner Track pack if you are using in a room and want to go around a corner! If you have kids or grandkids who LOVE race cars – this needs to be on their Christmas list! This product has moved to the top of my toy list for these kids!

I love that if I needed to hang out at our table and guard their tickets I could still have eyes on them as they play no matter where they are in the restaurant. Plus with the free WiFi that they now have, I can get work down while my children play if I needed to. That is a WIN WIN for everyone!

I LOVE fall! There is just something in the air – maybe the magic of the season starting to trickle in, but whatever it is – it’s my favorite season of the year. Las Vegas finally starts to cool down and we can spend a lot more time outside as a family. We love getting outside to enjoy all that fall in Las Vegas has to offer, and I love spending one on one time with the kids making fall crafts and yummy treats.

With my son’s upcoming school bake sale fundraiser, I knew it was the perfect time to “Mix up a Moment” and make these adorable mini pumpkin cupcakes using Pillsbury Funfetti® Halloween Baking Mixes and Pillsbury Funfetti® Halloween Vanilla Flavored Frosting.

Recently I took my youngest to Walmart after preschool. He loves being a helper, and I love using the time while my older son is still in school to spend some extra time with my little man. Once in Walmart, we hit up the Halloween Bake Center. It is super easy to spot, ours was located in the middle of the floor right across from the Bake Aisle which made it really easy to pick up any extra baking supplies I needed. At these inexpensive prices, Walmart makes it easy to stock up for the season so I’m ready for anything that might get thrown at us!

Judging by the display – we weren’t the only ones who stocked up! 

Making these mini pumpkin cupcakes couldn’t be easier! All you need is the Pillsbury Funfetti® Cake Mix and Frosting, some green frosting to make the leaf, and mini pretzel sticks for the pumpkin stem!

I mixed up the cake mix exactly as shown on the box and added them to my mini cupcake pan*.

When baking mini cupcakes you will want to adjust the cooking time to 9-12 minutes depending on your oven. Be sure to check after 9 minutes to see if they are done.

Once the cupcakes were done baking and cooling we got out the Pillsbury Funfetti® Halloween Vanilla Flavored Frosting and frosted all the cupcakes. I used an additional Pillsbury frosting to add a leaf. Next, I used a pretzel stick as the stem and they were finished! I found using a tablespoon to apply the frosting was much easier than a knife for mini cupcakes. Of course, if you wanted to get fancy you could also use a piping tool to make them look even more polished.

My little man had a blast helping me frost them and put the sticks in. Although, I think he had the most fun eating one after we were all done!

These turned out so cute and are the perfect little Halloween treat! My boys love the Pillsbury Funfetti® mixes because of the sprinkles inside the mix! I love them because they are really easy to make, take the stress out of baking, and they look like you put a ton of effort into it.

I’m fairly certain these mini pumpkin cupcakes will fly at the bake sale! I bought another box of the Pillsbury Funfetti® Halloween Cake Mix that I plan on using to make more mini pumpkin cupcakes for my son’s preschool Halloween party later this month!

Overall I’d give this bag an A with my only con being that it isn’t machine washable. It does spot clean really nicely though, so I kept it at an A. You could easily gift this to any fashionable mama on your baby shower list and not worry that it would be returned!

There are days when I’m active from sun-up to sundown. I’m running from the time my feet touch the floor until I tuck my sweet boys into bed at the end of the day. This is what a typical day looks like for me.

5:00am – Wake up and workout

6:00 – Get ready for the day
6:20 – Wake up my 7 year old for school
6:20-7:00 – make breakfast & lunches for school
7:15 – School drop-off
7:30 – 8:30 – Start work. Check and respond to emails. Feed my younger son breakfast and get him ready for school

12:00pm – Preschool pickup
12:15-2:00 – Feed kid lunch and continue/wrap-up work

3:00-5:00 – Laundry/clean home, make dinner, help son with homework, play with kids

5:30-7:30 Sports practice, sports games, or Boy Scouts. If no after-school activities, then go for family walk/park play

7:30-8:00 Bath, books, kids bedtime
8:00-11:00 Mommy time… aka work on Blog(s) or LuLaRoe/Spend time with husband

Whew! I’m tried just writing that down!!

How We Are Doing It – Clean Eating

We both decided for to do something about our food that would be really easy to stick with. No fad diets – just eating clean. My husband isn’t tracking his calories, but I am in an effort to meet the weight loss goals I have set for myself. However, to start I’m not counting fruits and veggies in my calories at all. In the past when I’d track calories I’d get really frustrated that I “couldn’t” eat anything else because I hit my daily calories for the day and I’d end up giving in because I was still hungry. For now if at the end of the night I’m wanting something crunchy/salty I will eat some carrots & celery with dill Greek yogurt dip but only track the dip calories. Or if I want an apple, but I’m already at my 1500 calorie intake for the day, I’m not going to beat myself up and see it as a failure. If over the next few weeks/months I stall with my loss, I might start tracking fruit, but for now I’m viewing it as a “free” food.

(I try to stick to plain yogurt, but this is just so good – I can’t help but enjoy it every once in awhile.
Thankfully it’s a LOT lower in sugar than other brands…)

I’ve been making sure to keep my healthy fats and protein high and my carbs lower. The carbs I do eat (other than fruit) are mainly sweet potatoes, brown rice, quinoa, and oats.

This is my go-to dinner when we are short on time because it seriously takes me about 15 minutes to prepare.
Plus all my boys love it too!

One thing that is new to me that I’ve totally been digging using lately is this new organic butter alternative that Melt Organic sent to me. They have a few varieties, but this is the one I will add to a baked potato or veggies. The Organic Butter 2.0 is made with only the best virgin coconut oil and flax seed oil that work together to promote a healthy body. It’s super creamy, GMO free, and a great way to add healthy fats to meals. Even my husband loves it – and he’s super picky!! They have a chocolate version that is DIVINE over Kodiak Cakes!

For liquids I have stopped drinking diet coke (again – why I ever returned to it I just don’t know – it’s all crap!!), and upped my water intake. I focus on getting in 1/2 my body weight in ozs. Mostly I drink water or La Croix (I’m seriously obsessed with pamplemousse).

I had unsweetened green tea (note – order it with no water for a more concentrated tea), while he enjoyed their iced passion tea and lemonade.

I also drink a LOT of green tea both caffeinated in the am and decaf after 3/4pm. I love making 2-3 mason jar quarts cold brewed in the fridge and just replacing them as I drink them. The Bigalow Lemon or Bigalow Jasmine are my two go-tos at the moment. But I’m totally open to hear your favorite brands – let me know in the comments!!

Weekly Weigh In

It’s been 3 weeks since I started eating like this. I’m not totally comfortable sharing my starting weight, but let’s just say it was as heavy as I was when I gave birth to my second son. (super sad face) I have lost a total of 10 lbs to date.

• Week 1 I lost 3 lbs.
• Week 2 I lost 5.2 lbs.(likely mostly water weight)
• Week 3 lost 1.7lbs. (This week)

Workouts

I’m slowly getting back into running. It’s been a long time since I have run consistently. To be honest, once my injuries healed up I just wasn’t feeling it. Slowly as the weight crept back on and my sleep got all messed up again I realized just how much I needed it in my life. Plus I’ve already committed to the RnRLA and RnRLV half marathons coming in October and November!! I will be using the Run RocknRoll virtual marathon series to help me get back into gear for those!

My 7 yo got this picture – he rocks!! A guitar solo shot after a slow 3.1 on the treadmill last week!

So my goal is to run at least 3 times a week with either HIIT or one of my favorite walking DVDs (Hey – don’t knock it! they are a lot of fun, low impact, and really get me sweating!) I also just bought Lauren Gliesberg’s at Home weight training plan. I thought it would help me get more comfortable with lifting again before I try to go do it in the crowded gym… Plus with two boys and my husband’s work/travel schedule it’s super hard to get to the gym on some days. I think I will also be incorporating yoga on my rest day to help me keep my muscles nice and happy for the upcoming training.

Smoothie Bowl Recipe!

I’m the kind of person who is usually just fine eating the same breakfast over and over again, especially  if I like it. Lately I’d been hearing a lot about smoothie bowls, (which are super similar to acai bowls). After pinning a bunch of them I decided it was time to try my own.

With a strawberry, blueberry and yogurt smoothie to start, there’s ton of nutrition and flavor. Then it’s topped with strawberries and kiwi slices, plus chopped walnuts for a little crunch. It’s perfect for breakfast and snacks ­ even dessert!

It was a huge hit! My older son and I both have had this on multiple occasions. It makes a fun after school/camp snack or breakfast. You can do many different kinds, really whatever you want to include would be good! I am working on a Mango/Peach one and a dessert smoothie bowl as well!

Ingredients:

• 1 medium banana
• 1/4 cup unsweetened almond milk or cow’s milk
• 1 teaspoon honey*
• 1⁄2 cup frozen blueberries
• 1 cup fresh strawberries
• 1⁄2 cup vanilla yogurt

Toppings:

• Strawberry slices
• kiwi slices
• Chopped walnuts

Directions:

• Place the banana, milk, honey*, blueberries, strawberries and yogurt in a blender.
• Puree until smooth.
• Pour into a bowl and top with strawberry slices, kiwi slices and chopped walnuts.
• Serve immediately.

Notes:

*My boy loves this version with honey, but I’m trying to watch my added sugars. So to lower the sugar content in this smoothie sub the honey for these Stevia drops. 1-2 is plenty. Also you can sub out the vanilla yogurt for plain yogurt and add vanilla extract.
