Paleo Green Eggs and Ham (made with Kale)

Healthy Green Eggs and Ham to celebrate Dr. Seuss's Birthday!
Ingredients
  • 2 Eggs
  • Small Handful Kale (can substitute spinach)
  • Splash Almond Milk (can substitute any milk)
  • add cheese if desired
  • Spiral Sliced Ham
  • 2 drops green food coloring
Instructions
  1. For Eggs:
  2. Using a blender or hand mixer blend eggs, kale (or spinach), and almond milk until mixture turns a light green color.
  3. Pour mixture into greased frying pan and gently mix eggs until scrambled.
  4. Remove eggs from heat.
  5. For Ham:
  6. Mix ¼ cup water with 2 drops green coloring.
  7. Pour water mixture into frying pan.
  8. Place ham slices and cook until warm.
