Paleo Granola Recipe

- 3 Cups chopped walnuts, pecans, cashews, and pumpkin seeds
- 1 cup raisins
- 4 T flax seeds
- 4 T chia seeds
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ¼ cup honey
- ¼ cup coconut oil
- Combine coconut oil and honey in a pot on low/medium hit. Once it has melted together add spices and vanilla
- Stir well
- Set aside
- Pour nuts, seeds, flax, chia, and raisins into a large bowl
- Mix well
- Pour honey mixture over top and stir until combined
- On a baking sheet lined with parchment paper spread the granola until even
- Put in the oven at 350 for 10-15 or until granola is golden brown
- Cool until set (This could take a hour or two, if you are short on time put it in the freezer for 30 mins)
- Break granola into pieces
- Enjoy!
