- 3 large eggs
- ⅛ C. milk
- ½ C. shredded zucchini http://amzn.to/2bdi5nI
- 1 C. shredded cheddar cheese
- ¼ C. green onions, diced
- salt & pepper to taste
- Preheat the oven to 350 degrees and spray a 6 count muffin tin with non-stick cooking spray.
- Whisk the eggs and combine all the ingredients.
- Fill each muffin well about ¾ full.
- Bake 25-28 minutes. Allow them to cool before removing from the pan.
- *You can easily double the batch if you wish
