Quick & Healthy Zucchini Egg Breakfast Muffins!
Ingredients
  • 3 large eggs
  • ⅛ C. milk
  • ½ C. shredded zucchini http://amzn.to/2bdi5nI
  • 1 C. shredded cheddar cheese
  • ¼ C. green onions, diced
  • salt & pepper to taste
Instructions
  1. Preheat the oven to 350 degrees and spray a 6 count muffin tin with non-stick cooking spray.
  2. Whisk the eggs and combine all the ingredients.
  3. Fill each muffin well about ¾ full.
  4. Bake 25-28 minutes. Allow them to cool before removing from the pan.
  5. *You can easily double the batch if you wish
