One of the best things about being a parent is watching your child find magic in things adults can’t see. Christmas is one of my favorite holidays for that reason alone, but it can also quickly become on of the most stressful holidays. Teaching your children that the holidays are about more than just getting presents can be hard. That is why even in our favorite traditions I try to show that giving to others can be very rewarding.

As a child I looked forward to working with my mom baking Christmas cookies – or more specifically decorating them. I watched as she made batches of cookie dough and couldn’t wait to decorate them. This is a tradition I have continued with my boys but in the chaos of the season I decided to make it even more simple. After heading to Walmart to pick up our favorite Betty Crocker cookie mixes (Sugar cookies and Peanut Butter cookies), it was time to get to work.

My boys love helping me in the kitchen so when I invited them in to help me make the cookies they were eager to help. First up we made the peanut butter blossoms.  My toddler got to dump the mix, while my older son was able to help me measure out the oil, water, and crack the eggs. They both helped to form the peanut butter balls and press the kisses into the baked cookies.

Then they needed a break. So I made the sugar cookie mix and added flour to make them shapes. I rolled the dough and cut the dough into Christmas Trees.  Each boy got their own cookie sheet to decorate. We found some fun Betty Crocker Christmas themed sprinkles to decorate with, and the boys went to town!

While we were decorating we talked about the people who had to work on Christmas Eve and Christmas. My boys love police officers and firefighters so they were happy when I suggested we pack up most of our cookies and take them to the Fire Station. It was a simple way to bring a surprise to someone they look up to and admire greatly. They loved getting to go to the fire house and share their cookies. They asked if we could go home and bake more to giveaway more. Even as they were learning why giving is rewarding, I too found myself marveling in them. Here I thought I was teaching them the lesson, and they showed me that there is joy in even the smallest gifts. This is a tradition I plan on continuing with them!

It seems like these days there are more and more “must do” activities that even your favorite family traditions can start to seem more like something that needs to be done as opposed to something you look forward to doing.

I have really fond memories of baking Christmas cookies with my mom growing up. She would make 4-5 different kinds of holiday treats every year. This was something that I really wanted to do with my boys as well, but each year I just found that I kept running out of time to do it all and then I felt like I had failed on a family tradition.

As with everything else in parenting, the more you do it, the more you learn. One thing I have learned is it isn’t always about making the most fancy cookies, or pinterest perfect projects, but rather just the time spent with the family. That’s why I’ve decided to keep my holiday cookies very simple this year. Maybe when the boys get older and are able to help more, then we will do more of my mother’s recipes, but for now these easy holiday sugar cookies are just perfect.

This easy holiday sugar cookies recipe actually comes from the back of a Gold Metal Flour Package. For the frosting you can use either store bought (remember… it’s about the time spent together doing, not how much time you spent making it that counts), or if I have a few extra minutes I will do a simple powdered sugar recipe that my mom taught me and we used to decorate gingerbread people growing up.

Easy Holiday Sugar Cookies
Ingredients
  • 2¾ cup of flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 cup butter, soft (2 sticks)
  • 1 cup white sugar
  • 1 egg
  • 1 tsp almond extract (the original recipe calls for vanilla, but I love the flavor of almond in these)
Instructions
  1. Preheat oven to 375. In a bowl combine the flour, baking soda, baking powder. Set aside.
  2. In another bowl, cream the butter and sugar until smooth. Add the egg and vanilla. Gradually blend in the dry ingredients.
  3. Roll 1 tsp of dough into balls and place onto ungreased cookies sheet.
  4. Bake for about 8 minutes or until golden. Let stand on cookie sheet for 5 minutes before removing to wire racks.

Once the cookies have cooled you can start decorating. My boys love to help mix the ingredients, spread the frosting, and add the sprinkles. And in the end, it was their smiles that made the process worth it, not how much time I spent creating something.

Wow! I can hardly believe there are only 10 days left until Christmas! It seems like this month is going even faster than this year did. If you are anything like me you are likely in the middle of holiday party madness. School, friends, playgroups… every time I turn around I have another event.

To be honest, I don’t have time to say yes to most of these, but it’s the holidays so I feel like we should make our best effort.  In an attempt to save myself some time this holiday season I decided to simplify our holiday baking and cookie making. This year we will be making 1-2 of our favorite holiday cookies, but everything else will be super easy recipes.

Luckily easy doesn’t mean you have to sacrifice taste! These White Chocolate Walnut Caramels are the perfect holiday gift for neighbors, hostess gifts, or even your cookie exchange! They taste amazing, and look like you put a lot of effort into them. No one has to know they are effortless, unless they read my blog and then you are busted. But they will likely have a mouth full of White Chocolate Walnut Caramel goodness and no one will care either way!

Ingredients

  • 24 caramel squares, wrapped (I like these delicious vanilla caramel squares)
  • 12 ounces white chocolate chips
  • ½ cup crushed walnut topping

Supplies

  • Parchment Paper
  • Candy sticks or toothpicks
  • Melting pot

Directions

 

  1. Get your baking sheet ready with parchment paper cut to the size of your baking sheet.
  2. If you have a melting pot, set it to medium high heat and add your white chocolate chips. Stir occasionally until every last chip is melted. Reduce the melting pot to warm so that the chocolate chips stay melted and doesn’t harden.
  3. If you do not have a melting pot you can melt the chips in a double boiler over the stove or in the microwave, 25 seconds at a time.
  4. Unwrap all of the caramel squares and push candy sticks into the centers. Toothpicks can also be used, but this is to make the chocolate dipping process less messy.
  5. Dip caramel squares into the melted white chocolate, making sure to cover tops and sides. Place caramel square on parchment paper and pull the candy sticks out of the caramel squares. Before chocolate begins drying top the white chocolate with walnut pieces.
  6. Allow the walnuts to harden into the chocolate, and once the chocolate is completely hardened peel them away from the parchment paper.

Walnut caramel squares can be stored in a sealed bag or tin for up to two weeks so whether you are gifting them or exchanging them at a cookie party, you know everyone will have plenty of time to enjoy these delicious White Chocolate Walnut Caramels! I always find the cutest holiday tins at the dollar store or you can use these!

Hey Everyone! Freckles The Elf here!

I’m the Knight brother’s Elf On The Shelf (Well… Technically I am the oldest Knight boy’s Elf on the shelf, but they added a kid my second year here, so I guess I’m his elf too!)

Last year I shared all my silly shenanigans on Emily’s blog and I have it on good authority other Elves would come and look at these posts for inspiration!  There were even rumors of Elves with their own Pinterest accounts!

I know you are all fans of links and being able to see old posts, so here are my antics from last year…

This year I came to the Knight home after a year away with Santa on December 1st so that means I will be sharing all the silly stuff I do for the next 24 days.  I just love seeing the boys smile when they find me. I took it easy on them this first week, but I’m hoping the mom let’s me step up my silly game this week!

Well, this was fun… I accidentally landed on this castle which apparently was being guarded by a Dragon and an Ogre. I sprinkled a little North Pole magic on them and we were besties by morning!

I’m not sure the kid’s mom liked me wasting their TP, but I couldn’t resist the opportunity to add a little more mischief into their household!

If there is one thing I love to do, it’s to roam the house on Rexy! He’s such a nice dinosaur. Their puppy was begging to go with us, and with eyes like that who can say no!

I found my favorite reason for the season in the manger so I decided to pray for a while. See that book in the back, I was trying to get back into good graces with the boys mom… She loves new books and so do the boys!

Back at the North Pole the toy elves are all abuzz (get it – Buzz!!) with the news that Toy Story 4 is going to be out in a few years! I was just chatting with these guys to see if I could maybe get some sort of role…

Alright, so that was my adventures, antics, and shenanigans from this week! I sure had fun moving around and waiting for the boys to find me! Who knows where I will show up at next week!

It’s almost December 24th and that means that Elf on The Shelf is going back home to the North Pole!  But how will your elf say goodbye to your family?  Make sure you talk with your elf so it is a smooth transition for your kids.  Especially if your kids are younger, 30 days of elf visits can seem like a really long time and to go suddenly to nothing can be hard on them.  So maybe by doing a few extra things on the last day your elf is staying with you can help easy the transition and make the day fun!

One of the reasons I really embraced the Elf on the Shelf is he is the perfect consistent reminder for my 4 year old that his behavior matters.  Let’s face it, 4 is hard.  It is selfish, it is “me me me”.  Some days at the end of the day I feel like all I did was say “No” or “That is not acceptable behavior”.  Elf on the Shelf was a visual reminder that behavior matters and good things come to those who wait. My son is a good boy, but like I said being 4 is hard so for him since he’s such a visual learner the elf on the shelf has been great!

My husband and I have talked about doing a Rock Jar for a while, and introducing it after Elf on the Shelf seemed like a great idea.  In the same way that Elf on the Shelf helped to remind my son to keep his manners and attitude on the “nice” side, the Rock Jar will be a constant visual that having good behavior, listening, doing nice things for others means something more than just a good job, way to go.  It will teach him to work towards a long term goal, and it will have the short term pay offs of seeing the Rock Jar grow and getting excited to fill it.

So after talking with our Elf, when he comes to visit on his last day before returning to the North Pole, he will bring with him some treats and gifts for K.

  • A book “A Christmas Wish” which is about a little girl who wants to be one of Santa’s elves so she helps out an elderly neighbor and sets on her way through the wintery landscape of Scandinavia. See what I did there?  A book about helping others and Christmas, and elves!
  • A note about where he is going, what he has brought and why he brought it.
  • A jar to fill with rocks
  • Special snowflake rocks.  This will remind K all year long that this was a gift from his Elf and his Elf is watching him.
  • A candy cane – K’s favorite Christmas treat.

Last year her elf brought her kids Christmas jammies, Reindeer food (oats), some Christmas books, hot cocoa, and popcorn to enjoy before Santa’s visit.

Decorate the tree: Each year we get our kids a ornament to commemorate the year.  It might be fun to have Elf bring a family ornament each year.  I know as a mom looking back to the times when my kids were young enough to enjoy the Elf on The Shelf it would be a fun way to remember.

I talked with other parents via Instagram to see what their Elves do, and this is what I heard…

  • Proof of Life: Have your Elf come to visit with a note saying goodbye and leave a picture of them with Santa hanging out at the North Pole.  That way they can look at it whenever they want and know their elf is having a nice time. (@elizabeth_ann0414)

  • Keeping with Tradition: If your Elf has been around for a few years, keeping goodbyes the same every year helps!  Each year our child get’s a book and a note. (@fancygirlnancy)
  • Lift the Magic: Have Elf come with a note giving the kids permission to touch just for one hug and a picture.  (@mama2denver)
  • Decorate the tree: Each year we get our kids a ornament to commemorate the year.  It might be fun to have Elf bring a family ornament each year.  I know as a mom looking back to the times when my kids were young enough to enjoy the Elf on The Shelf it would be a fun way to remember.

Christmas is right around the corner, and I will admit I hadn’t done much decorating until recently!  However, I decided it was time to get everything up.  Since we’ve rearranged our furniture to make room for our new china cabinet I now have a large blank wall that was begging for some decoration.  That combined with the holiday cards that were piling up in a stack on our table I decided to create a Christmas banner that would not only bring a lot of Christmas cheer to the wall, but would also act as a way to display our holiday cards.

To create this display you need:

  • Twine
  • 5 Different Fabrics – 1 Foot Each
  • Mini Clothesline Pins
  • Thumbtacks
  • Hole punch
  • Scissors
  • Merry Christmas Banner Flags
  • Cardstock
  • Holiday Cards

I purchased my supplies and cut the fabric into 1 inch strips.  I then began the long, but easy process of tying the fabric onto the twine.  The nice thing about fabric banners is they have a shabby chic look to them so they don’t need to be perfect.  Once my fabric banner was finished I printed out my Merry Christmas banner flags on cardstock and used a hole punch on each corner.  I stung the flags on the twine and hung it in front of the fabric banner.  (I actually think I could have used more fabric on my banner to make it longer.  I do have extra left so I may add a few to each end.  I used tacks to secure the twine to the wall, but you can easily use hooks too.

Once the banner is hung you can stop there.  Or you can add another length of twine.  This will be used to display your Christmas and Holiday cards!  I loved how this turned out!  I look forward to using it for years to come.  If you are looking for another way to display your Christmas Cards, check out our tutorial on an easy DIY display/memory board.

Ethel M Holiday Cactus Garden

The Ethel M Holiday Cactus Garden is a Knight family tradition.  For us, Christmas isn’t complete without a trip to the chocolate factory!  Open 7 days a week from 5pm – 10pm visitors can wander through the garden’s illuminated cacti pathways and enjoy the chocolate wonderland. Throughout the season, local choirs will perform holiday favorites and now through December 23rd Santa will be there from 5pm-9pm.  Ethel M is located at 2 Cactus Drive Henderson, NV.  Do not miss Ethel M’s peppermint bark.  This is by far and away the best peppermint bark I have tasted, and I have had a lot as it is my favorite candy! Bellagio Conservatory

The Bellagio conservatory is beautiful and breathtaking year round, but perhaps even more so during the holiday season.  Enjoy this free exhibit and let you senses experience the holidays in the breathtaking surrounding of this botanical enchantment!  The entire exhibit is made from flowers and other botanical that are maintained every morning.

A holiday favorite returns with a family of topiary polar bears adorned with 18,000 snow white carnations. Momma bear will watch over her two cubs as they frolic through the poinsettias and float on an icy pond. In an effort to build awareness about protecting the polar bear’s home, Bellagio will partner with Coca-Cola to promote the World Wildlife Fund (WWF) during this year’s exhibit. Coca-Cola’s goal, in partnership with WWF, is to raise awareness and funds to help create places where polar bears and people can thrive in the Arctic. – Bellagio Conservatory

While you are there don’t forget to step outside and enjoy the fountains as well!   Or if it is too chilly, walk around the corner from the conservatory and enjoy the world’s largest chocolate fountain! The Bellagio Conservatory is free and is open 7 days a week 24 hours, and located at 3600 Las Vegas Blvd South, Las Vegas, NV 89109.  The holiday exhibit will be up until January 5th, 2014.

Gilcrease Orchard Sleigh Rides

Gilcrease Orchard has teamed up with Doubletree Carriage and our horse drawn sleigh on wheels will take you through the vistas and views on the gorgeous orchard wonderland.  As you make your way to the North Pole, you will hear sounds of jingle bells on the horses and will be entertained with soothing Christmas stories from the sleigh drivers, who are remarkable to say the least. Enjoy the cozy little ride all the way to the north pole where you will be greeted by Santa’s elves who will escort you through a secret tunnel through time to visit good ‘ol St. Nick himself! That’s right, Santa Claus will be waiting for you in his home!

Santa Train – Boulder City

All Aboard!  Kids of all ages will love spending a few hours in Boulder City at the Nevada Southern  Railway.

This year the State Railroad Museum at Boulder City celebrates it’s 12th Annual Santa Train. This fun family event has become a tradition in many homes throughout the Las Vegas valley. Family’s get to experience riding the a train decorated for the holidays and have an opportunity to visit and have photos taken with Santa and Mrs. Claus as they make their way through the train. After their visit with Santa, children will be able to experience face painting and balloon creations on the platform. Additionally, visitors will have the opportunity to experience the Eureka, a fully restored & operating late 19th century steam locomotive. Visitors will also be able to take rides on our Live Steamers (mini-steam engines) and experience a holiday wonderland at the model train show as well.

The Santa train is in it’s last weekend (but does run for several weekends in December) running the 21st-22nd.  Tickets cost $5 for everyone 1 and up. Tickets can be bought in the Museum Shop Monday – Friday 8:00 a.m. – 2:00 p.m. and on weekends at the Station Ticket Office from 9:30 a.m. – 3:00 p.m. or go to http://www.nevadasouthern.com/Ticket_Availability.html for mail order tickets. (There are no online ticket sales).

Bass Pro Shop Santa’s Workshop

I promise they loved it every other year we went, but I can’t resist sharing the Santa Fail of 2010!

Head over to the Bass Pro Shop and take the kids on a outdoor adventure that is all indoors.  Meet Santa and get a free picture to take home, play with tons of fun games and activities that are on display including a train, monster trucks, and a fun race track for remote controlled cars, and then head over to partake in a free craft!  you can even write and mail letters to Santa!  Plus there are fun things to look at all around the store including the fish tanks and many kinds of wild animals.  Check the Bass Pro schedule for Santa times as well as craft times. Bass Pro Shop is located at 8200 Dean Martin Dr, Las Vegas, NV 89139 and the holiday activities will run through December 24th.
