How to Eat Kale – 4 easy ways to really enjoy it. {With Recipe}

Did you know Kale is a super food? Seriously, this leafy green has some crazy super powers.

Kale is loaded with antioxidants, high in Vitamin C, Beta Carotene, Vitamin K, and Calcium.  It even has anti-inflammatory and anti-cancer properties.

But if you are like me – you probably didn’t know how to eat Kale. Don’t worry – there is a Blog for that!

I first tried Kale because it came in my Bountiful Basket.  I steamed it, and fell in love.  I was hooked.  Here are my top 3 ways to enjoy Kale, and a few recipes I like to use.

  1. Baked into Chips (See below for recipe)
  2. In Soup – My current favorite recipe for this (I leave out the sausage, it still tastes great!)
  3. Sauteed. (Bobby Flay was the first recipe I tried for this and adore it!!)
  4. Raw – I like to mix Kale with lemon and garlic, then add tomatoes, chickpeas, and avocado.  Top with a little olive oil and Balsamic.  YUMMO! (If you eat it raw – make sure to do so soon after buying so it is less bitter.  (1-2 days))

These days Kale is a staple on my grocery runs.  I just really love it.

Baked Kale Chips (my favorite!) – Recipe from Allrecipes

Ingredients

  • 1 bunch kale
  • 1 tablespoon olive oil
  • 1 teaspoon seasoned salt

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
  2. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt. (I also add garlic.)
  3. Bake until the edges brown but are not burnt, 10 to 15 minutes.
  4. ENJOY!

      Hi Sara
      The taste is green, fresh. It can turn bitter if you wait to long to eat it. But if you saute it or boil it, it is a great way to reduce the bitterness . Like spinach or swiss chard.

      The taste is green, fresh. If you use it right away it won’t be bitter. But if you saute it or boil it, it is a great way to reduce the bitterness if you wait to long to eat it. Like spinach or swiss chard.

    Just tried kale sauteed in olive oil with garlic and salt(seasoning salt next time) with sweet potato and fish dinner. Soooooo good. Great chew snack while watching tv too. Why didn’t I know about this before? Heard about and saw it prepared on Dr. Oz’s show couple weeks ago.

    I love kale,very super healthy!!!,for those of us with cats or dogs,teach them to eat it raw or slightly cooked,it’s so good for them too,after few bites they’ll love it,my little girl dog goes real nuts for it,and she has never been sick,she is 6 years old now,she has been eating it since 10 weeks old,it keeps her teeth clean/white as well!!!…

      Remember though you are still eating the same amount of Kale as if you were eating a salad… In other words go easy on it until your digestive system is used to the Kale! 🙂

    I’ve recently started putting kale in everything. This morning I made what I call a Spinach and Kale Omelette Kale Taco. Just make a regular omelette with a bit of chopped spinach and kale and some salt, then take a whole branch of kale and cut off some of the stem so all that is left is the leafy part that when closed in half looks like a taco. Once your omelette is done, place it in the center of the kale leaf and fold it over to have a kale taco.

    Other ways to enjoy it are by adding bits into hamburger meat and cooking it. Or mixing it with avocados and making guacamole, or a spread for toast.
