I LOVE fall! There is just something in the air – maybe the magic of the season starting to trickle in, but whatever it is – it’s my favorite season of the year. Las Vegas finally starts to cool down and we can spend a lot more time outside as a family. We love getting outside to enjoy all that fall in Las Vegas has to offer, and I love spending one on one time with the kids making fall crafts and yummy treats.
With my son’s upcoming school bake sale fundraiser, I knew it was the perfect time to “Mix up a Moment” and make these adorable mini pumpkin cupcakes using Pillsbury™ Funfetti® Halloween Baking Mixes and Pillsbury™ Funfetti® Halloween Vanilla Flavored Frosting.
Recently I took my youngest to Walmart after preschool. He loves being a helper, and I love using the time while my older son is still in school to spend some extra time with my little man. Once in Walmart, we hit up the Halloween Bake Center. It is super easy to spot, ours was located in the middle of the floor right across from the Bake Aisle which made it really easy to pick up any extra baking supplies I needed. At these inexpensive prices, Walmart makes it easy to stock up for the season so I’m ready for anything that might get thrown at us!
Judging by the display – we weren’t the only ones who stocked up!
Making these mini pumpkin cupcakes couldn’t be easier! All you need is the Pillsbury™ Funfetti® Cake Mix and Frosting, some green frosting to make the leaf, and mini pretzel sticks for the pumpkin stem!
I mixed up the cake mix exactly as shown on the box and added them to my mini cupcake pan*.
When baking mini cupcakes you will want to adjust the cooking time to 9-12 minutes depending on your oven. Be sure to check after 9 minutes to see if they are done.
Once the cupcakes were done baking and cooling we got out the Pillsbury™ Funfetti® Halloween Vanilla Flavored Frosting and frosted all the cupcakes. I used an additional Pillsbury™ frosting to add a leaf. Next, I used a pretzel stick as the stem and they were finished! I found using a tablespoon to apply the frosting was much easier than a knife for mini cupcakes. Of course, if you wanted to get fancy you could also use a piping tool to make them look even more polished.
My little man had a blast helping me frost them and put the sticks in. Although, I think he had the most fun eating one after we were all done!
These turned out so cute and are the perfect little Halloween treat! My boys love the Pillsbury™ Funfetti® mixes because of the sprinkles inside the mix! I love them because they are really easy to make, take the stress out of baking, and they look like you put a ton of effort into it.
I’m fairly certain these mini pumpkin cupcakes will fly at the bake sale! I bought another box of the Pillsbury™ Funfetti® Halloween Cake Mix that I plan on using to make more mini pumpkin cupcakes for my son’s preschool Halloween party later this month!

* One box mix could easily make 48 mini cupcakes, but we decided to use the remaining mix for mini loaf cakes for the bake sale which yielded 24 mini pumpkin cupcakes and 6 mini loaf cakes.
