Weekly Family Menu #MealPlanning

Last week we did pretty good with our menu planning.  The only meal we skipped was the the Soy Ginger Salmon, and that was only because I couldn’t get to a store with a salmon selection that looked appetizing.  I will move it to this weeks menu plan.

Another side note about our menu plan last week.  I cooked the Panko Crusted Chicken Tenders in coconut oil, and it turned out more like a coconut chicken.  It was a nice added flavor!

I have been getting a lot of my menu plan recipes from SkinnyTaste.com.  I really enjoy the layout of her site and that it has all the weight watcher recipes.  However, If you know any other WW friendly websites please let me know!

Our Family Menu This Week:

Sunday: Sandwich and Salad Night

Monday: Rosemary Rolled Chicken Breasts

Tuesday: Crockpot Picadillo from Skinnytaste.

Wednesday: Leftovers

Thursday: Crock Pot Picadillo Stuffed Peppers from Skinnytaste using leftovers Picadillo from Tuesday.

Friday: Asian Pork with Mushrooms

Saturday: Leftovers

Sunday: Sandwich and Salad Night

I’ve also begun to juice daily using my new Bella NurtriPro.  I’ve been trying to cut out all soda from my diet, and add more veggies to my daily intake, and I have to tell you, so far I am in love with juicing.  It’s like a glass of sunshine!

Last week I began to feel a bit run down and was worried I was heading towards another cold.  I juiced 2 grapefruits, 3 oranges, and 2 large handfuls of spinach (keeping the pulp instead of straining it), and let me tell you the result was a glass full of Vitamin C.

I am pretty sure I will NEVER be buying juice at the store on a regular basis again.  Even my 3 year old loves everything I’ve made and is always asking for his green juice!

    I love it when my wife does a weekly dinner menu. She actually writes it down for everyone to see and anticipate the night’s meal!

    One thing she says is that it really helps her in “not” returning to the grocery store multiple times during the week. Also, I am a definitely a Pinterest fan when it comes to food. I find a new recipe and email it to her and my daughter (high school) and they both work it into our meal that week…win-win!!!

    I don’t juice and I just started meal planning about a month ago – I’m loving it so far. This is our menu for the week

    mon – crockpot barbecue chicken (it’s in their now, it smells divine!)
    tues – herb baked chicken
    wed – deli sandwiches
    thurs – chicken rice casserole
    fri – leftovers and/or frozen stuffs (as I call things like hot pockets!) depending on the amount
    sat – soup
    sunday – Angel chicken (chicken in a cream cheese/whipping cream sauce) over noodles

      It’s from the WW website – pound chicken flat. Then add Chopped, fresh arugula leaves, diced tomatoes and rosemary to center of chicken.
      Spray a casserole dish with nonstick cooking spray. Roll up the breasts with the filling inside and place the rolls seam-side-down in the casserole dish. Bake at 425°F for about 30 minutes, basting them twice with a splash of cranberry juice. – ENJOY!

    I don’t juice but have been pretty into making smoothies. I love that your meal plan only consists of really cooking only 3 times in the week. I really need to write mine out. I went to the store and bought supplies for several meals but, without a plan, I forget what to make when and some items start to go bad 🙁

      I have tried to cook more – and failed. Plus I always had all these leftovers. 3-4 times a week makes it easy for me, and my family. Thanks TerriAnn!

    Bwhaha – I don’t know why I wrote ‘herb’ I meant ‘spiced’ LOL – I make that in the crockpot, with a dash of this a dash of that (garlic, onion, mustard powder, paprika, salt)

    I don’t have a juicer but my absolute favorite blend was beet juice, carrots and apple.
