If it was possible, I think January was even more crazy than December, and I had a baby in December! This past month was all about trying to get back on schedule. I say trying because it seemed like illness loomed at every corner. First, Squishy had the stomach flu, then the hubs and I came down with a lingering cold. 2+ weeks later we are still feeling this cold. Thankfully, Baby D seemed to miss the illnesses, but just as I was pushing away the cobwebs the cold had left I was slammed with double Mastitis. Talk about no fun. I was so sick I had to have my husband take off a day of work so he could take Squishy to preschool. Thankfully, knock on wood, we seem to all be on the mend…
Two weeks ago I joined Weight Watchers again. I am really ready to shed this baby weight and get back to working towards my complete weight loss goal. I picked Weight Watchers because it has worked for me in the past, my husband enjoyed all the cooking I did, and it has a breastfeeding friendly weight loss plan. So far I’ve only had one weigh in, but I am down 1.4 lbs. I hope this week to have better numbers as I will be working in some cardio this week too!
This week my husband celebrates is 36th birthday! It is tradition to pick your favorite meal or restaurant for your birthday. I’m looking forward to creating some fun birthday inspired crafts with the boys this week for him as well! Happy Birthday Hubs!
Here is our Meal Plan for the week of February 3rd:
Sunday: Turkey Chilli – My sister in law’s recipe.
Monday: Asian Meatballs with Lime Sesame Dipping Sauce

From Weight Watchers: All Time Favorites CookbookWednesday: Leftovers
Thursday: Build Your Own Vegetable Quesadillas
Friday: The Hub’s Birthday Meal of Choice – Pizza

Happy birthday to your husband! Congratulations on your beautiful new baby! And oh my goodness, you’ve been through the wringer lately you poor thing! I wouldn’t wish a cold followed by double mastitis on my worst enemy! I sure hope you’re back to feeling 100% soon. Good luck on your weight loss journey, Emily!
P.S. How in the world did you survive a horrible cold, double mastitis and still manage to come up with a meal plan? My hero…

I love the Skinnytaste website too! She has some amazing looking dishes!
I hope that your husband has a great birthday too!
When I do meal planning we tend to eat better and stick closer to a budget! I really need to get back on track!
Emily says
Thank you Jackie – healthy cooking and saving $$ are two big reasons I got back to meal planning!! Hope you are enjoying your week!

Awww! Congrats on the beautiful baby. My 3rd is due in June and I can’t wait.
The menu this week looks delicious! I love pizza, too and was planning an all out roasted veggie pizza for later this week. Best of luck with Weight Watchers.

I love that you have a dine out day built in! I love to cook but dine out days are my favorite. My husband would love Mondays menu.
Emily says
I have to keep it real – even if dine out ends up being carry out, we usually always do it. 🙂 Asian Meatballs are a big hit around here too!! Thanks Ashley!

I really need to do this. I try, but it lasts like 2 days and then I’m overwhelmed. LOL
Emily says
Ha! That was me at first, then I realized it doesn’t have to be complicated, just 3-4 meals per week, and I always ask the family what they want so that helps too!
Lolo says
Happy Birthday to your hubs!! We have really loved meal planning the past couple of weeks.
Amanda says
Congrats and happy everything! I’m horrid with weekly meal planning but you make it look easy.

I love menu planning! I love even more to see other people’s menus! Sounds yummy. Can I come over? 😉
Emily says
Of course, as long as you don’t judge the messy house!! I also love ideas from others menus!!

One of my goals has been to implement a weekly meal plan. Thanks for sharing!
Kimberly says
I find it pretty impressive that you can juggle everything and yet still plan out your weekly meals. In my house we never plan and just wing it based on what our taste buds are craving. Hope you are feeling better.
Emily says
Thanks Kimberly! I’m so indecisive that if I wait to plan, we end up eating the same foods over and over and over… 🙂
Hanan says
Well look at you go momma!
Emily says
Thanks Hanan!

I am always horrible at planning meals but I have always wanted to get more organized. My kids normally get home from school and then I’m running around trying to figure out what to eat. A weekly family menu would be so nice to have! You’ve inspired me. I’m on it!
Emily says
Yay!! If you share it on your blog – come back and leave a link. I TRY to do these weekly, and I love looking at others ideas!!

Ahh! What an adorable picture and happy birthday to him. Meal planning seems to make everything easier. Good for you but don’t be too hard on yourself because sometimes you can not lose any baby weight, and shouldn’t, until you finish nursing. It was that way for me, it just came off overnight when I was done.
Emily says
Wendy – it was a lot easier to lose it when I was done nursing my first. Thanks for the reminder. Slow and steady!! 🙂

Sounds like a great week of meals! We’re doing The Fresh 20 now and I really love it. It makes it so much easier knowing I have groceries purchased and everything I need for the week. You’re my hero getting this much done after just having a baby!
Emily says
Ashley you are sweet! I’m still in my pjs with messy hair at the end of most days… Le sigh. What is the Fresh 20?
Brandie (@ Home Cooking Memories) says
I really need to get back on track with menu planning, I’ve been doing so horrible at it lately. Your meals sounds really good and I agree about SkinnyTaste…so much good stuff there! Happy Birthday to your husband!
