Weekly Family Menu #MealPlanning

I’m patting myself on the back over here – it’s been a full month of menu planning and for the most part we have stuck to them very well.  Occasionally we will shift days based on tastes, but other than that…

My husband did however completely veto the Fettuccine with Roasted Peppers and White Beans.  He just isn’t into dishes like that… so now I’m on the hunt for creative meatless dishes that I can actually get him to eat.  He really isn’t a big pasta fan at all and thinks all dinners should have meat in them.  Thankfully I had some chicken breast tenders in the freezer and threw together a super quick and easy Greek Chicken. (Recipe coming soon!)

This week I have to admit I’m feeling a little bit stumped for ideas.  I have weeks where I could live off of pizza and salad, but the pizza part isn’t super healthy, and my son HATES pizza!  (Seriously, what kid hates pizza?) So… I’m a bit bland and boring this week, but it works for me.

This Weeks Family Menu:

Monday: Rosemary Chicken with Greek Salad and Romanesco (Romanesco is pictured below. It came in my organic bountiful basket this week!  Pretty cool huh!)

"veggies" "Odd vegetables" "Unique" "Broccoli"

Tuesday: Pizza (Mommy will be at the Las Vegas premiere of Disney’s OZ The Great and Powerful.)

Wednesday: Leftovers

Thursday: Roasted Potatoes, Chicken Sausage and Peppers. (From SkinnyTaste.com)

Friday: Chicken Piccata with broccoli

Saturday: Leftovers

Sunday: Salads, Soup, or Sandwiches

    ooo, Romanesca is so pretty!
    I have a cookbook problem…..so I usually turn to them fr ideas, and then browse the links on my Foodie Friday.
