I’m pretty sure you’ve noticed that I haven’t been consistant with my Paleo Meal Plans lately… Honestly I feel face first into a carb and struggled to find my way out. I dealt with feeling frustrated, emotionally drained, mad at myself, all while trying to convince myself that it wasn’t that bad…
Reality? Failing isn’t that bad as long as you pick yourself up and start over.
While I’d love to say this was my last time falling off the healthy train, I’m not going to. 32 years of emotional eating doesn’t just go away overnight. I’m just going to pick up and start again, and again, and as many times as I need to.
So with my husband also on board to re-commit to healthy eating and working out, I have signed up for TWO 5Ks, gotten back to our co-op for buying produce, and of course Paleo menu planning. My husband isn’t strict Paleo, but he eats what I cook.
As a reminder, none of my Paleo menu items will contain eggs. My son has FPIES and as a result I’ve had to cut dairy, eggs, and beans from my diet which is what really led me to eating a Paleo menu in the first place.
Last night we kicked off the week with an amazing new find! Seeds of Change “Jalfrezi” organic curry sauce.
This was SO delicious and super easy to cook with. I simply diced up some chicken breast, cooked it, added the sauce, added two heaping handfuls of spinach, and some baby bella mushrooms. It says it is medium-hot, but I didn’t find there to be much “heat” in the sauce at all! Even my 4 year old was a fan! He was begging for more chicken and mushrooms.
For the rest of the week I will be focusing on green juice and smoothies for breakfast, salads at lunch and some super simple dinners. For me getting back on track starts with keeping it simple – even with my meal prep!
Monday: Chicken strips wrapped in bacon
Tuesday: (T-BALL Night) Chicken Sausages with roasted veggies
Wednesday: Leftovers/Salad for Dinner
Thursday:Rosemary Pot Roast with Cauliflower Mash from Three Diets One Dinner
Friday: Date Night – Chipoltle and THOR!! (He’s Paleo right?)
Saturday: Chicken and Gravy from Nom Nom Paleo
